Ingredients
  

  • 3 cups all purpose flour spooned and leveled (396 grams)
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 12 ounces of club soda
  • 6 oz pepperoni diced
  • ¼ cup diced mild pepper rings
  • ½ cup melted butter

Method
 

  1. Preheat the oven to 375 degrees.
  2. In a large bowl combine flour, baking powder, salt, and sugar. Mix until well combined.
  3. Dice pepperoni and peppers. Add diced pepperoni and pepper rings and stir into flour to coat the pepperoni and peppers so they don’t clump together when baked.
  4. Pour in club soda and mix to combine.
  5. Spread batter into a loaf pan.
  6. Pour melted butter on top of the batter.
  7. Place in the oven and bake for one hour.
  8. Remove from the pan and cool for 15 minutes before slicing.

Notes

Variations: Add cheese, replace club soda with equal amounts of beer, replace mild pepper rings with jalapenos.
