Melt in Your Mouth Banana Bread

Banana bread is one of those recipes that just never goes out of style. It is easy to throw together, smells amazing while it bakes, and makes you feel like you have your life together , even if all you did was rescue a few overripe bananas from the trash.

Ingredients
  

  • 3 ripe bananas mashed
  • 1/2 cup melted butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 teaspoon cinnamon

Method
 

  1. Preheat your oven to 350°F and grease a standard loaf pan.
  2. In a large bowl, mix the mashed bananas and melted butter.
  3. Stir in the brown sugar, eggs, and vanilla.
  4. Add the flour, baking soda, salt, and cinnamon if using. Stir just until combined.
  5. Pour the batter into the loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick comes out clean.
  7. Let cool for about 10 minutes before slicing and serving.

Notes

  • Mix in chopped nuts or chocolate chips for a little extra crunch or sweetness.
  • Swirl in some peanut butter or Nutella before baking a for a fun twist!
  • Storage: Once completely cool, wrap bread in plastic wrap. It will keep at room temperature for 3-5 days. Banana bread freezes beautifully. Just wrap the bread in two layers of plastic wrap and freeze for up to 3 months. To defrost, let stand at room temperature for 1-2 hours.
