Holiday Cherry Chocolate Muffins

Packed with juicy dark cherries and rich chocolate chips, these muffins are the perfect combination of sweet and tart, soft and decadent. Best of all, they’re incredibly easy to make, allowing you to spend more time enjoying the festivities and less time in the kitchen.

Ingredients
  

  • ¼ cup sugar
  • ¼ cup shortening
  • 1 egg
  • 1 ¾ cups cake flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 cups frozen dark sweet cherries thawed and roughly chopped
  • ½ cup mini semi-sweet chocolate chips

Method
 

  1. Preheat oven to 400°F.
  2. In a large mixing bowl, cream together shortening and butter.
  3. Add the egg, mix until combined.
  4. Slowly mix in the flour, baking powder, and salt.
  5. Pour in the milk, stirring gently until all the ingredients are will incorporated.
  6. Gently fold in the chopped, thawed cherries.
  7. Mix in the mini semi-sweet chocolate chips, making sure they are evenly dispersed throughout the batter.
  8. Let the batter rest for 10-15 minutes.
  9. While the batter rests, line a 12 cup muffin pan with paper liners or lightly grease each cup.
  10. Evenly divide the batter between the muffin cups, filling each about 3/4 full.
  11. Bake for 20 minutes or until a toothpick comes out clean. Be sure to check at the 15-minute mark as oven temperatures may very.
  12. Cool and enjoy!
